Wet use matters more than it sounds. A dry stone loads up with the metal it removes and stops cutting, and the clogged surface starts burnishing the edge instead. Water — or an edge polishing solution — floats the swarf away and keeps the stone working. It also keeps the stone itself alive far longer.
Where polishing sits in the process: a file cuts the angle and leaves a burr; stones remove the burr and refine the surface to something that holds on hard snow. Skipping the stone leaves an edge that feels sharp to a thumbnail and grabs unpredictably on snow.
Keep the stone flat against the bevel and work in one direction. Let the stone do the work — pressure is what glazes both the stone and the edge.
