Cutting stones remove metal. That is the distinction worth understanding before buying: a cutting stone takes material off an edge, where a polishing stone refines a surface that has already been cut.

Use them wet. Dry stones load quickly and then stop working. Water or Secret Sauce floats the swarf clear, which both cuts better and makes the stone last considerably longer.
Cutting or polishing? Use a cutting stone to take down a damaged or work-hardened edge, and polishing stones afterwards to bring the surface back. Most edge work needs both, in that order.
Keep the stone flat against the bevel, work one direction, and let it cut — pressure glazes both stone and edge.
