What you give up: a temperature-matched wax will be faster on the day it was made for. What you gain is that the base stays saturated, and base saturation over a season does more for a ski's speed than any single race-day application.
This is the wax to buy in quantity. If a bar feels too precious to use, it gets saved for competition while the base dries out through January — which is exactly backwards.
